What are truffles?

Part of the fungus family, Truffles grow in the wild similarly to mushrooms; however, they grow underground in a symbiotic relationship with the roots of trees. Truffles grow between 5 to 30 centimeters underground, depending on the species and the season. Because of their elusive nature, truffles are hunted and harvested by specially trained breed of dogs, Lagotto Romangnolo, native to Italy and the only world renowned purebred recognized as the truffle searcher.

 Named after the Goddess of the hunt and the countryside, Diana is the canine companion of truffle hunters. They set out at the first light of day, in the golden hours of dawn, embarking on a journey to find the treasured Black Winter Truffle, also known as the Black Diamond. This species of truffle is typically harvested in the fall & winter months, between October through to January, and grow as deep as 12 inches underground.

Diana's finely tuned nose easily navigates the dense woods of majestic oak birches, guiding the truffle hunter's "zappino", a tool used to gently dig truffles from the soil. Once a truffle has been removed from the ground, it is up to the truffle hunter to fill the hole with the soil to ensure the spores remain in place and the oak's roots undisturbed for a fruitful truffle season the following year.
